I think I just had what might have been the best sub sandwich ever.  Grilled chicken and bacon and horseradish cheese, chipotle bbq sauce, light mustard, with the usual veggies (lettuce, tomato, onion, and some peppers), all on wheat bread.

The best thing though, it was from a local gas station and not subway or quiznos.

Sounds pretty good. I like me a good sandwich.  I just finished off the sandwich I made last night:

Roast Beef, Arugula, Mayo Pesto, Caramelized Red Onions in red wine reduction sauce on grilled ciabatta bread.

Mac&Cheese made from scratch.

Start with a short cut pasta, usually Elbow Macaroni*, cooked thoroughly.  Strain the extra water, add milk, less if you want a thicker cheese sauce, more if you want it thinner**.  Return to boil, add cheese cut into small cubes, appx 1/2" works well.  Colby and Velveta is a good combination if you're on a budget, but any single cheese or combination of cheeses will work.  Stir constantly to avoid burning, season to taste+.  Allow to cool three minutes.  Garnish with shredded cheese and serve with choice of beverage and whole fruit++.

Optional: thoroughly cook and cube poultry or steam and detail shrimp to add an extra layer of flavor**.  Clean fresh vegetables or defrost packaged veggies to balance the meal+++.  

*My preference is a blend of Farfalle and Rotini
**I prefer mine a little thinner with chicken added to it, so the cheese sauce properly covers the chicken.
***Try a blending of Cheddar, Mozzarella, and Co-Jack (a marbled Colby-Monterey Jack combination) for a rich variety of flavors.
+My favorite spice combination is mixing black pepper, Paprika, and Penzeys Mural of Flavor to add a touch of zing to it.
++Milk always compliments Cheese very well, I personally enjoy a can of Pepsi or a Glass Bottle of Coke with mine.  Red Grapes or a McIntosh Apple is an excellent finishing taste to complete the meal.
+++Fresh Broccoli florets will bring a crunch to an otherwise very soft dish.  Red and/or Green peppers can be used to add a splash of color.
